On weekends Dan loves to cook scones, and at the moment this recipe is a favourite especially with Cadel.

Ingredients
3 cups plain flour
6 teaspoons baking powder
pinch salt
50 grams butter
3/4 cup chopped dates
1 tablespoon sugar
1/2 teaspoon cinnamon
1 1/4 cup milk
extra milk, cinnamon, and sugar
Recipe
Sift flour, baking powder, sugar, cinnamon, and salt together. Add dates. Squish butter with knife or hands until it is broken into very small pieces. Mix milk in quickly to a soft dough . Lightly knead.
Dust tray with flour press dough onto tray and mark into even scone sized pieces (usually about 12). Brush with extra butter and dust tops of scones with a mixture of cinnamon and sugar.
Bake for 10 minutes at 220 degrees.
These are great served warm with fresh coffee.

I have decided to share a recipe with you all once a week.
This week it is the recipe for my Mum’s Smoked salmon quiche. This is a great quiche as it is lovely and light, and is tasty served hot or cold. Its also great for picnics.

Ingredients
4 Egg yolks
2 Eggs
1 1/2 cups of cream
nutmeg (freshly grated if possible)
Pepper and salt (to taste)
100 grams Smoked Salmon
1/2 a bunch of dill
1 bunch and shallots
1 bunch of chives
Shortcrust pastry (Fresh or frozen)
Recipe
Preheat oven to 180 degrees. Blind bake base for 15 minutes. Then lower oven temperature to 150 degrees.
Chop dill, shallots, and chives. Cook shallots in a generous nob of butter until soft, then add dill and chives and warm through. Take of heat and cool.
Dice smoked salmon.
Combine other ingredients. Whisk very gently until just combined.
Put Shallot mixture and smoked salmon evenly in cooked base. Pour in egg mixture.
Bake at 150 degrees for 45 minutes.
Lovely served hot with asparagus and truffle oil mash, or cold with a nice green salad.

The weather was so gorgeous today we decided to head over to Petersham Park for a picnic with Daniel’s parents. Cadel and Hamish had a great time playing and eating grass (respectively).
We dined on this…

Smoked Salmon Quiche with salad, and ….
Gramma pie with cream… yum.
Then we left the kids with their grandparents and headed over to Newtown for a glass of wine at the Bank hotel and a browse in the shops. Lovely…
